King Crab and Mango Rice Paper Rolls15/05/2015

400 grams of The Crabit Red King Crab meat
1 chilli (seeds removed), finely chopped
½ red capsicum, julienned
¾ carrot, julienned
1 mango (2 cheeks), julienned
1 avocado, sliced
1 bunch of chives, chopped into batons
100 g bean sprouts (optional)
1 tablespoon of sesame oil
1 tablespoon of mild chilli sauce
15 rice papers
½ teaspoons of finely chopped chilli (seeds removed)
1 tablespoon of finely chopped carrot
1 clove of garlic, finely chopped
2 teaspoons of caster sugar
2 tablespoons of white balsamic vinegar
2 tablespoons fish sauce
3 tablespoons of soy sauce
2 tablespoons of water
Juice from ¼ lime
Prepare the dipping sauce first by combining all of the ingredients. Refrigerate allowing the flavours to develop.
Into a large mixing bowl, combine the chilli, red capsicum, carrot, mango, avocado, chives and sesame oil, mild chilli sauce and 2 tablespoons of the dipping sauce.
Moisten the rice papers (for about 15 seconds). Lay out the moistened rice papers, then place on a piece of Crabit Red King Crab meat, mango, avocado and a bit of the salad mix, then roll up.
